I cannot tell you how many times in the last two months I have gotten the question…What can I eat to get in more protein?!  We can only eat so much chicken, turkey, tuna, protein bars and powders until we just cannot force ourselves to put another morsel in our mouths. However, without hitting our target protein totals, we are at risk of losing that hard earned lean muscle work so hard to maintain each week.

Stewart and I have experimented a lot with recipes, and combinations…we have thrown protein powder in just about everything you can imagine from oatmeal to hot chocolate to pancake mix, and yogurt. I am always looking for new, easy and “on the go” options for hitting my macros. Today I experimented with a Chocolate Protein muffin…Have not tasted it yet, but here is the final product!!

Chocolate Protein Muffins:

1/2 Cup Bob’s Red Mill Low Carb Baking Mix

1/3 Cup Unsweetened Cocoa Powder

1/4 Cup Sweetener of choice (I used Splenda/Brown Sugar Blend)

3/4 Cup Chocolate Protein Powder (I used Fit Miss Delight)

1/4 Avocado

6 oz. Baby Food Fruit (You can pick just about anything that suits your taste, I used Apple/Squash/Peach combo)

1 Egg

Heat Oven to 350, spray muffin tin with cooking spray.

Mix all dry ingredients and wet ingredients separately…mix together slowly. Pour into muffin tins and bake about 15-20 mins or until no batter shows on your toothpick! Enjoy.

This is a perfect pre-workout snack (if you train first thing in the morning). Or just a treat anytime!! Hard to find another sweet treat with 9g protein 🙂
